With friends coming for a coffee this afternoon,
I decided to make something from this new book.
It really is a gorgeous book, with easy to follow recipes,
and the all important photo of how it should turn out!
This is the yummy cake I decided to make,
upside-down toffee apple brownies.

can't wait for 2pm for the coffee and cake!

How to make:-
Ingredients
115 g butter, please extra for greasing
175g light muscovado sugar
2 eggs, lightly beaten
200g plain flour
1 tsp baking powder
1/2 tsp bicarb of soda
1 1/2 tsp mixed spice
2 eating apples, peeled and coarsely grated
85g hazelnuts, chopped
Toffee apple topping
85g light muscovado sugar
55g butter
1 desert apple cored and thinly sliced
Method
Preheat oven to 180 C/350 F/ gas mark 4.
Grease a shallow 23cm/9 inch square tin.
To make the topping, place the sugar and butter in a small saucepan and heat gently, stirring, until melted. Pour into the tin and arrange the apple slices over the mixture.
To make the brownies, place the butter and sugar in a large bowl and beat together until light and fluffy, then gradually beat in the eggs. Sift together the flour, baking powder, bicarb of soda and mixed spice, and fold into the mixture. Stir in the apples and nuts, then pour into the tin.
Bake in preheated oven for 35-40 mins, or until firm and golden. Leave to cool in the tin for 10 mins, then cut into squares.
The apple could be replaced with pineapple or pear if you prefer!
